Chicken Tikka Masala ~45 min
Need: 1.5 lb chicken thighs · ½ cup plain yogurt · 4 garlic cloves · 1 tbsp ginger · 2 tbsp garam masala · 1 tsp cumin · 1 tbsp paprika · 2 tbsp oil · 1 onion · 1¾ cup tomato puree · ¾ cup heavy cream · 1 tsp salt · rice or naan to serve
- Marinate chicken in yogurt, half the garlic, ginger, 1 tbsp garam masala, paprika.
- Sear chicken in oil until browned (~6 min); set aside.
- Cook onion with remaining garlic, ginger, cumin, 1 tbsp garam masala until soft.
- Add tomato puree + salt, simmer 10 min, stir in cream and chicken, simmer through.
Shrimp Scampi ~25 min
Need: 12 oz linguine · 1 lb shrimp (peeled) · 3 tbsp butter · 2 tbsp olive oil · 5 garlic cloves · ¼ tsp red pepper flakes · ½ cup white wine · 1 lemon · ½ tsp salt · ¼ cup parsley
- Cook pasta until al dente; save a splash of pasta water.
- Heat oil + 1 tbsp butter, cook shrimp 2 min per side; remove.
- Cook garlic + pepper flakes 30 sec, add wine, reduce by half.
- Stir in remaining butter, lemon, salt. Toss with pasta, shrimp, parsley.
Beef & Broccoli Stir-Fry ~30 min
Need: 1 lb flank steak · 6 cups broccoli · 3 tbsp soy sauce · 1 tbsp cornstarch · 2 tbsp oil · 4 garlic cloves · 1 tbsp ginger · 2 tbsp oyster sauce · 1 tbsp brown sugar · ½ cup broth · 1 tsp sesame oil · rice to serve
- Toss sliced beef with 1 tbsp soy sauce + cornstarch.
- Steam or blanch broccoli ~3 min; set aside.
- Stir-fry beef in oil ~3 min; remove.
- Cook garlic + ginger 30 sec, add oyster sauce, sugar, remaining soy, broth; simmer to thicken.
- Return beef + broccoli, toss, finish with sesame oil.
